tiramisu (non-alcoholic)

h i

so, recently, i did a thing.

and yeah, in the thing, i made tiramisu. so, here’s the recipe if anyone wants it.

  • this recipe makes 2 servings (i made 4 servings in my thing)
  • no bake
  • no alcohol
  • 40 minutes prep

  • 150g cream cheese
  • 150g double cream
  • 1 teaspoon of instant coffee
  • 2 tablespoons of sugar

  1. put a whisk and two bowls into the freezer for 15 to 20 minutes
  2. using two different bowls, put half the cream cheese into each
  3. add half a tablespoon of sugar to each half of the cream cheese
  4. take out the whisk and bowls from the freezer
  5. add half of the double cream into each bowl
  6. add half a tablespoon of sugar into each bowl
  7. whisk one bowl until the cream is stiff
  8. add a teaspoon of instant coffee to the double cream and sugar that hasn’t been whisked
  9. whisk the mixture until stiff
  10. add one bowl of whipped cream to one bowl of cream cheese
  11. mix the two mixtures of cream cheese and whipped cream
  12. layer into a dish or tupperware
  13. leave in the fridge to chill for at least 5 hours

personally, i think this recipe is too sweet and also, it’s quite hard to cut ‘pieces’ of the tiramisu (it’s a lot easier to just eat it from the container). i know that a ‘proper’ tiramisu should have sponge cake, but last time i made tiramisu, i tried using shop-bought sponge fingers and soaking them with coffee: i’m not sure whether it was because i wasn’t doing it right or because i bought decorative sponge fingers (which are hard & crispy) instead of actual sponge cake (which is soft & spongy), but the ‘sponge’ layers in the tiramisu were soggy and the coffee tasted way too acidic for my liking. so this time round, i just left out the sponge entirely. i think next time, i’ll try to add less sugar and maybe try to coat the sponge fingers in the coffee cream cheese, whipped cream mixture(??), i’m not sure. either way, if i end up with a better recipe, i’ll update this post :))

update: so because i made quite a lot of tiramisu, i had left a lot of it in the fridge and on the third day after i made it, i thought it actually tasted a lot better and it had just the right amount of sweetness (for me)

hope you have a good day!!
