creamy tomato soup

  • 9 tomatoes
  • 1/2 onion
  • 2 cloves of garlic
  • 1 stick of celery
  • 250g tomato juice
  • 2 tbsp of ketchup
  • 50g butter
  • 1 tsp olive oil
  • 100ml double cream

  1. cut the tomatoes in half
  2. scoop out the seeds into a sieve; place the sieve over a bowl to collect tomato juice from the seeds
  3. cut the seedless tomatoes into small chunks, making sure to cut off the stalk that extends into the tomato
  4. crush the garlic
  5. dice the onion
  6. chop the celery into 5 equal chunks
  7. heat the butter, oil, onion & garlic in a casserole/wok for 5 minutes
  8. add the chopped tomatoes, the juice collected from the tomatoes (the seeds are not needed in this recipe), the shop bought tomato juice & celery into the casserole/wok
  9. add 1 1/4 tsp of salt & mix well
  10. bring to a boil on large heat
  11. bring to a simmer for 20 minutes
  12. take out the 5 pieces of celery
  13. add the double cream to the soup
  14. blend in the blender for 2 to 3 minutes or until smooth
  15. pass the soup through a sieve into a clean pot/pan
  16. bring the soup to a simmer
  17. serve whilst hot
  18. enjoy :))

i really like creamy tomato soup, this recipe takes a while to make, but i do really like the end result😝 i edited the original recipe to suit my tastes, so i made the simmer time longer (the original suggests 20 to 30 minutes, but the flavour is still too sharp for me if the soup simmers for 25 to 30 minutes; but that’s just a personal preference😅)

growing up, we rarely had creamy tomato soup, and when we did, it was the Heinz canned cream of tomato and basil (i think, i honestly can’t remember off the top of my head😅) i remember we always had it when my sister & i were home alone and we would have to make lunch for ourselves: we would make the soup and then make pasta, add a few tablespoons of ketchup to the soup and then put the pasta in the soup ♨ so making creamy tomato soup always makes me feel really nostalgic and warm & fuzzy on the inside☺☺

thank you for reading & i hope you have a good day!!
